1 cup quinoa
2 cups water ½ apples, thinly sliced
1/3 cup raisins
½ tsp cinnamon
Vanilla soy milk
Rinse and soak the quinoa for 5 minutes. In a medium pot, combined quinoa and water and bring to a boil. Reduce the heat and simmer, covered for 5 minutes. Add apples, raisins, and cinnamon and simmer until water is absorbed. Serve with soymilk and sweeten if necessary with honey or brown sugar.
*Can also substitute with amaranth and boil with 3 cups of water instead of 2.
